Here we try to shed some light on how to heat a hot stone cooking for meat and when is the best time to reach the right temperature. We use volcanic rock to explain this, as its properties make it an ideal stone for cooking food.
This explanation applies to other types of stone as: marble, granite, slate, …
The cooking stone can be heated in two ways:
Put directly on the fire.
If it is heated directly on the fire, it is best to heat it on a low heat first, then turn it to the maximum after 10 minutes, and reach the highest temperature for about 30 minutes.
Warm it up in the oven
If you’re heating in the oven, get in (if possible) when the oven starts to heat up and let it sit for about 40 to 50 minutes. The recommended stone temperature is 250°C to 350°C.
After repeated use of the stone, a non-stick patina develops on the surface, preventing food from sticking.
